Abstract

Food small and medium enterprises (SMEs), including Indonesian micro, small, and medium enterprises (UMKM), need practical ways to document production conditions and trace production batches. This study presents an IoT-based monitoring prototype that integrates temperature and humidity sensing, a microcontroller, cloud data storage, a mobile dashboard, and QR-based batch identification. The prototype is intended to display frying-process temperature, production-area humidity, cold-storage readings, production duration, and a preliminary operational risk indicator. The current evaluation is limited to prototype-level functional observation and partial screenshots/data; a complete calibrated sensor study, communication reliability test, latency measurement, and multi-batch field evaluation have not yet been completed. Therefore, the present results demonstrate the system concept and interface workflow rather than validated improvements in food safety or recording accuracy. The study contributes an integrated monitoring design for UMKM food-production settings and identifies the additional validation needed before operational deployment.
